Crunchy Baked Green Beans Fries

I got a nice stash of green beans in my CSA box this week. On my quest to find a kid proof way to green bean fries serve them, I found this recipe. I made quite a few adjustments to the recipe because I wanted the green beans to be coated better with “crunchy” stuff and squeeze in some good herbs. These Crunchy Baked Green Beans Fries were a hit! I served them with burger wraps and roasted red and purple potatoes. Unfortunately, I didn’t exactly measure the ingredients, but here’s a pretty good guess. I had plenty of leftover green beans and I plan to reheat them on stoneware for lunch tomorrow and I’m pretty sure they will still be crispy.
I started with about 1 lb of fresh, yellow green beans but you can use thawed, frozen green beans as well. You can use breadcrumbs, panko crumbs, ground oats, whatever you prefer. I used about 6-7 ancient grains crackers that I put in the food processor. I also used my homemade ranch seasoning mix. You can really add whatever herbs and seasoning your family enjoys. Even just salt and pepper with the crumbs and cheese would good. Also, be sure to season the green beans with real salt when they come out of the oven! These are just as good as french fries and would make a great snack as well!

Ingredients
  1. Approximately 1 lb of fresh, trimmed green beans
  2. 2 eggs, beaten
  3. 1/4 cup Parmesean cheese, grated
  4. 1/3 cup of crumbs (I used 6-7 Ancient Grain crackers that I put in the food processor)
  5. 1 tbsp of homemade ranch dressing mix
  6. 1/2 tsp garlic powder
  7. 1/2 tsp real salt
  8. 1/2 tsp black pepper
  9. Olive oil
Instructions
  1. Preheat the oven to 425 F.
  2. Drizzle olive oil on your baking sheet and spread around so beans don't stick.
  3. Beat eggs and dip green beans in egg mixture.
  4. Combine all the seasonings, crumbs and cheese and mix well.
  5. Toss the green beans into the seasonings.
  6. Line green beans on the baking sheet in one layer.
  7. Bake in oven for 10-15 minutes until crispy.
  8. Season with more real salt and serve.

Labor Part 2--Lana's Birth Story

After 36 hours of early labor and the nesting done, we laid down for another nap around 4pm. I woke up earlier than Chris and then finally woke him up around 6:30pm because Dr. Yoon was coming back by to check on me. She did some more acupuncture and as she was leaving, my water broke around 7-7:30pm. We called Michelle, our midwife, back and she was on her way over. One year ago, I was sitting in Riverbluff, my home church for over 28 of my 32 years, when I saw it for the first time. It was a video of images of Charleston, my beloved home, to the tune of "God of This City." We had just found out we were moving.
